Vegetable oils, butters and waxes, extracted from oil fruits, principally contain fatty esters from glycerol or fatty alcohol.

A minority is composed of free fatty acids and unsaponifiables. The word "unsaponifiables" applies to all molecules that cannot be saponified:
hydrocarbons (e.g. squalene),
sterol and derivations of sterol (e.g. cholesterol, beta-sitosterol, stigmasterol),
tocopherols and tocotrienols (vitamin E)
eand carotenoids, precursors of vitamin A (carotenes and xanthophylls).
